Spiced Apple Cupcakes with Creamy Cinnamon Frosting

Later on today I’ll be posting a Smoky Tomato and Cheese Quesadilla but first I wanted to cover these awesome cupcakes I made last night.

So here’s my shout-out to Stephanie over at Eat Drink Love.  I read multiple blogs and after seeing her post became obsessed with making her Apple Spice Cupcakes with Cinnamon Cream Cheese Frosting.

I’m not much of a baker (like at all) but just needed to make them.

Some examples of my level of dedication to getting these bad boys made –  the first couple of apples we bought were not good (read: brown and bruised and yucky) requiring another trip to the store, so that made it the 4th time I went to a store that day.

To top that, I have a hand mixer with only one beater (no idea on where the other beater went) so had to start mixing the sugar for the frosting manually before being able to use the mixer.  Let me just say that my biceps definitely felt the burn.

It was worth it.  I made them last night for my husband and I to take into work today and they were completely devoured by our respective co-workers (or so my husband claims, I do know that my co-workers were loving them)

I did make a few small changes but basically stayed true to her recipe:

  • Instead of 1/3 cup oil I used 3 Tbsp cinnamon apple sauce and 2 ¼ Tbsp canola oil
  • The frosting calls for 4 cups of confectioner’s sugar and I only used 3 ¼ cup (I’m not a huge super sweet frosting person)
  • She lists sour cream and I used nonfat sour cream
  • I used the full 1 1/2 tsp of cinnamon in the frosting

The changes I made were in an effort to reduce a little of the fat and calories but these are still definitely an indulgence (which is why all of our co-workers got them).  I definitely didn’t need them lurking around my house continually tempting me!

Her post says a yield of 12 cupcakes but I managed to get 23 standard cupcakes along with 24 mini ones which was perfect considering we were taking them to two different places.  Below is the picture of them from her site (I used her photo because it puts mine to shame, although my husband looked super cute as he concentrated on frosting all of them).
